Ingredients

  • 1¼ tbsp coconut oil

    Alternative: oil (from any nut or seed)

  • 2½ cups mixed leaf salad

    Alternative: salad arugula (rocket)

  • ½ fresh chili pepper

    Alternative: tomatoes

  • 1¼ cups pineapple (diced)

    Alternative: mango (diced)

  • 6 oz chicken breast

    Alternative: cooked chicken breast strips (organic preferred)

  • 1¼ tbsp honey or agave syrup

    Alternative: raw cane sugar

  • Optional: ½ onion (medium sized)

  • Optional: ¾ tsp paprika (dry)

  • Optional: ¾ tsp chili pepper (dry)

  • Optional: ¾ tsp black pepper

  • Optional: a tiny bit of salt

  • Optional: ¾ tsp garlic powder

Directions

  1. Combine seasonings in a small bowl (chili, paprika, salt, garlic powder, pepper) mix and set aside.

  2. Peel and chop onion. Chop pineapple. Dice chili pepper and remove seeds. Mix together with honey and set aside.

  3. Heat a large skillet or pan to medium-high heat and add half of the oil.

  4. In the meantime, rub the rest of the oil and all of the seasonings on chicken breast.

  5. Put chicken in the pan and cook for 4-5 minutes a side, or until cooked through.

  6. Place cooked chicken on top of greens, top with pineapple mixture, and enjoy!
