Ingredients

  • ¾ tsp coconut oil

    Alternative: oil (from any nut or seed)

  • 2 oz cheddar cheese

    Alternative: vegan cheese

  • ¼ onion (medium sized)

    Alternative: tomatoes

  • ½ tomatoes

    Alternative: onion (medium sized)

  • 2 whole eggs

  • 2 corn tortilla

    Alternative: 100 % whole grain tortilla

  • Optional: a tiny bit of garlic powder

    Alternative: garlic clove

  • Optional: a tiny bit of black pepper

  • Optional: a tiny bit of salt

  • Optional: 2½ tsp fresh cilantro / fresh coriander leaf (chopped)

Directions

  1. Prepare salsa: wash and chop tomato, peel and chop onion, wash and chop cilantro and mix ingredients together in a bowl with salt, pepper, and garlic powder. Set aside.

  2. Heat a large skillet or pan over medium heat and add oil.

  3. Crack the egg(s) into a bowl and whisk until smooth. Pour egg(s) into skillet or pan, season with salt and pepper and scramble until cooked (about 4 minutes). Remove to a plate.

  4. Evenly distribute cheese and cooked eggs on tortilla(s). Carefully set tortilla with toppings into the pan over medium heat. Cook until the cheese begins to slightly melt and the bottom of the tortilla is golden brown.

  5. Carefully fold tortilla in half and cook for 1-2 more minutes, flipping half way through. Remove carefully to a plate.

  6. Serve warm with salsa and enjoy!
