8fit and The Colorful Kitchen Collaboration

Here at 8fit, we love providing you with new delicious plant-based recipes, so we collaborated with Ilene, the mastermind behind The Colorful Kitchen. All of Ilene’s recipes are 100% vegan and mostly gluten-free, which we know isn’t for everyone. She says it best, “I’m a firm believer in listening to your body and making food choices based on what’s right for you, but I also truly believe that everyone can benefit from incorporating more plant-based dishes into their diet.”

Beginning in May 2018, you’ll find three plant-based recipes from The Colorful Kitchen in your 8fit recipe book. First up is a breakfast recipe: Green Smoothie Power Bowl. This smoothie is packed with nutritious goodness like banana, mango, spinach, flaxseed, nut milk and some plant-based protein powder (or powder of your choice).

Next up is a delicious lunch – or dinner! – recipe, Thai Peanut Quinoa Salad. The salad is full of crunchy vegetables like cabbage, carrot and bell peppers, while the quinoa and peanuts give you a good dose of protein.

The dressing is a satisfying blend of peanut butter, soy sauce, vinegar, sesame oil, maple syrup and garlic powder. The flavors will make your tastebuds dance.

The third recipe in this plant-rich collaboration is a Black Bean Chili. It’s perfect for dinner and when made in a big batch is great meal prep. Refrigerate portions for up to three days and freeze for longer. The best part (in our opinion) is the dollop of guacamole on top. No guac? No prob. Add slices of avocado or a generous helping of Greek yogurt for some smooth coolness.
